Baked Lobster Tails and Mushroom Bites

Ingredients:
- 2 lobster tails cooked and shelled
- 1 package puff pastry shells
- 6 mushrooms chopped
- 1 cup Parmesan cheese
- 1/4 cup scallions chopped
- 1/4 cup heavy cream
- 1 egg
- 3 tsp parsley
- salt and pepper to taste

Directions:
Preheat oven to 350 degrees. In a mixing bowl, combine the lobster tails, mushrooms, Parmesan cheese, scallions, heavy cream, egg, salt and pepper. Spoon the lobster mixture into each puff pastry shell and bake in the oven for 20-25 minutes.

Maine Lobster Stuffed Portabella Mushrooms

Ingredients:
- 2 Maine lobsters cooked and shelled
- 6 portabella mushrooms
- 4 tbsp mayonnaise
- 4 tbsp cream cheese
- 1/2 tsp cayenne pepper
- 1/4 cup Parmesan cheese
- 1/4 cup bread crumbs
- 1 tsp parsley
- salt and pepper to taste

Directions:
Preheat the oven to 350 degrees. Cook the Maine lobsters, remove the shell and shred the lobster meat using a food processor. In a mixing bowl, combine the Maine lobster meat, mayonnaise, cream cheese, cayenne pepper, bread crumbs, Parmesan cheese and parsley. Spoon the lobster mixture into each mushroom cap and place them into the oven for 10-15 minutes.
