Slow Cooked Scallop and Lobster Bisque
Ingredients:
- 2 lobster tails cooked & shelled
- 2 cups shrimp cooked & chopped
- 12 scallops cooked
- 1 small chopped onion
- 2 chopped celery
- 1 can cream of shrimp soup
- Salt and pepper to taste
- 1 tsp tarragon
- 1 tsp cayenne pepper
Directions:
Place the chopped lobster, shrimp, scallops, onion, celery, cream of shrimp soup, tarragon, cayenne pepper, salt and pepper into large slow cooker. Allow the soup to simmer for 8 hours and serve the lobster bisque with fresh bread.
Baked Parmesan Stuffed Lobster Tails
Ingredients:
- 2 lobster tails
- 2 cups buttery round crackers crushed
- 1/4 cup Parmesan cheese
- 2 tbsp chopped fresh parsley
- 2 tbsp olive oil
- Salt and pepper to taste
Directions:
Preheat the oven to 400 degrees. Bake the lobster tails for about 8-9 minutes until firm. Shell the lobster tails by cutting a small slit down the middle of the shell, keeping the shell intact. In a mixing bowl, combine the, chopped lobster meat, crackers, Parmesan cheese, parsley and olive oil. Stuff the lobster mixture into lobster tail and continue to bake the stuffed lobster for 3-5 minutes until golden.
