Gourmet Lobster Salad with Vinaigrette
Ingredients:
- 2 lobster tails cooked, shelled, and chopped
- 1 head of lettuce chopped
- 10 baby tomatoes halved
- 4 hard boiled eggs chopped
- Vinaigrette dressing
- salt and pepper to taste
Directions:
To create a gourmet lobster salad, line the plates with a bed of lettuce and arrange the chopped lobster on top of it. Place the tomatoes and eggs in a circle around the lettuce. Sprinkle the salad with salt, pepper and vinaigrette dressing to serve.
Maine Lobster Stuffed Portabella Mushrooms
Ingredients:
- 2 Maine lobsters cooked and shelled
- 6 portabella mushrooms
- 4 tbsp mayonnaise
- 4 tbsp cream cheese
- 1/2 tsp cayenne pepper
- 1/4 cup Parmesan cheese
- 1/4 cup bread crumbs
- 1 tsp parsley
- salt and pepper to taste
Directions:
Preheat the oven to 350 degrees. Cook the Maine lobsters, remove the shell and shred the lobster meat using a food processor. In a mixing bowl, combine the Maine lobster meat, mayonnaise, cream cheese, cayenne pepper, bread crumbs, Parmesan cheese and parsley. Spoon the lobster mixture into each mushroom cap and place them into the oven for 10-15 minutes.
